I used to see people eat their sweet potatoes with grilled chicken and cringe. I never thought the two flavors belonged together. Man, was I wrong! I was talking to someone at work about meal prep, and yet again they brought up their amazing mixture of little orange cubes with plump white meat. Chicken and sweet potatoes…
Little did I know that I would soon fall in love with this sweet little protein packed recipe of goodness.
I headed down to the store last weekend for my weekly meal prep shopping trip armed with my well thought out plan of meals for the week.
I may not have the cleanest hand writing after a full day of work and being completely exhausted, but hey it’s better than nothing.
Standing by the sweet potatoes I carefully picked out my victims. I decided on a variety of what and standard orange. I figured if I was going to try something new, I might as well make it custom.
At home, I peeled the sweet potatoes and chopped them into small cubes. Once in cubes I lightly coated with coconut oil prior to cooking. I was told to preheat the oven to 425 and made sure to do that beforehand. I also chopped the chicken into 1” cubes give or take.
I filled up 2 cookie sheets, each with its own complete layer of either sweet potatoes or chicken. Both cooked around 15-20 minutes, and then I removed the chicken to re-season and cool prior to distributing into meal prep containers.
The sweet potatoes cooked to about twice the time and came out crisp and delicious. There was quite a bit of chicken left so I got creative with some rice and veggies.
The macros on both these meals are pretty balanced for the goals I’m working towards.

Overall I am very pleased with the outcome of this past weekend. Here is the final layout of my meal prep for the week.
