I never thought I would fall so in love with sweet potatoes. I was also never really that great at making any kind of potato. So I though to myself, how do you bake a sweet potato? Of course I asked around and heard many different methods. How was I to know which one was right? Well I decided to give it a shot which turned out to be quite miraculous during my Chicken and Sweet Potato Meal Prep. Man, was I glad I had my meal prep containers cleaned out, because I made so much I filled up the counter with meals ready for the week!
Well everyone, how do you bake a sweet potato? I’ll show you what worked for me, and honestly it’ll take a lot for me to change it up now. Here’s the recipe that I whipped together with sweet potatoes, chicken breast, and coconut oil. Only three ingredients, and I found magic.
How Do You Bake a Sweet Potato
A Recipe of Sweet Potato Cubes and Chicken Beast Chunks
I bought about 3 pounds of sweet potatoes at the store and lugged them home with the rest of my groceries. I went with both white and orange varieties because I felt like being interesting. Once I got home, I peeled every single one of them (not necessary). Really though, next time I won’t bother peeling them. It takes a lot of time to peel potatoes, and the skin has a lot of valuable nutrients anyway. But, if you do decide to peel your potatoes, this potato peeler is absolutely amazing.
- 6 oz. Sweet potatoes
- 5 oz. Chicken
- 0.5 Tbsp Coconut Oil
Alright, I’ll stop beating around the bush. So How do you bake a sweet potato? Here’s how:
- Preheat the oven to 425° F.
- Chop the sweet potato into cubes that are about the size of your fingertip.
- Place all the sweet potato cubes into a bowl and drizzle 1 Tbsp of coconut oil on for every 12 oz. of sweet potatoes.
- Mix everything together (I enjoy doing this with my hands)
- Spread the sweet potato cubes evenly onto a baking sheet
- Bake for 20 minutes, mix around the sweet potatoes, and bake for another 20-30 minutes (depending how soft you want your sweet potatoes)
Now here is where the amazing skill of multi-tasking comes in. If you’re baking sweet potatoes to make this recipe with delicious chicken breast, then repeat the above steps with chicken while your sweet potatoes start cooking. I typically cook the chicken between 20-30 minutes at the same temperature and make sure it doesn’t dry out, but let it fully cook at the same time.

You can adjust this recipe to fit your needs. Use less coconut oil to reduce fat. Use more sweet potatoes for increased carbohydrates or more chicken for more protein. My favorite thing about this recipe is that you can flavor it as you wish. One time I flavored the chicken with Lawry’s Seasoning Salt, another time with Frank’s Redhot Sauce, and another time I had it flavored as is with the sweet potato and coconut oil.
