I always found making scrambled eggs with anything to be quite the cumbersome task. Okay, maybe it wasn’t so cumbersome as much as I just got tired of doing it over and over. When I found I could make a meal prep with this quiche recipe I fell in love. I’d highly recommend using either muffin tins or these tricky little ceramic bakeware called ramekins. (To this day I’m still not sure how to pronounce that).
Low Carb Quiche Recipe
- 2 whole eggs
- 3 egg whites
- 1 oz. Chopped Bell Peppers
- 1 oz. Chopped Onion
1. Preheat the oven to 425 degrees F.
2. Mix all ingredients in a bowl with a wire whisk.
3. Pour ingredients into a muffin pan or ramekins.
4. Bake for 15-20 minutes or until cooked thoroughly.

This little adventure definitely made my breakfast meals go a lot more smoothly this week. Next time I’ll add a little seasoning or top it with some Frank’s Redhot Sauce when eating. It was delicious, but needs some spice.
